- 1 lb spinach
- 6 green onions, sliced
- pepper, dash
- 4 hard-boiled eggs, coarsely cut
- 8 slices bacon, crumbled
- olive oil
- 3 tbsp lemon juice
- 1/4 cup cider vinegar
- Marinate 1 clove garlic and 1/2 cup oil for an hour. Discard the garlic.
- In a small bowl, combine oil, 1 tsp salt, a dash of pepper, lemon juice, and cider vinegar.
- In a large bowl, combine spinach, green onions, eggs, and bacon. Add some salt and pepper for extra flavor. Pour dressing over salad and serve.
