Ingredients:
- 2/3 pound sweet potatoes, peeled and cubed
- 1 cup broccoli florets
- 2/3 pound Italian sausage, casings removed
- 2 tbsp olive oil
- 2 tbsp parsley plus extra for serving
- 6 eggs
- salt, black pepper to taste
Directions:
- In a skillet heat 1 tablespoon of olive oil over medium heat.
- Add the sausage and cook until the sausage is no longer pink.
- Remove from the skillet and set aside.
- In the same skillet add the remaining olive oil.
- Add the sweet potato and cook for 2-3 minutes.
- Add the broccoli florets and cook for 2-3 minutes.
- Return the sausage in the skillet and mix to combine.
- Season with salt and black pepper to taste and remove from the heat.
- Pour the sausage mixture in a lightly greased baking dish.
- In a bowl whisk the eggs. Add the parsley and season to taste with salt and pepper. Mix to combine.
- Pour the eggs evenly over the sausage mixture.
- Chill, covered overnight.
- Bake in a preheated oven, uncovered, at 350°F for 35 to 40 minutes.
- Sprinkle with extra fresh parsley, slice and serve.
